The Odorant Database of Leibniz-LSB@TUM is a valuable tool for the identification of naturally occurring odorants in food. It includes major substance parameters relevant to structure assignment such as retention indices and odor qualities, but also odor threshold values in different matrices and a list of foods and raw materials in which the substances have been detected in odor-active amounts.
