What´s the context?

Due to a maximal, individual genetic diversity of the odorant receptor genome, with the widespread occurrence of “specific anosmia” phenotypes, the mechanisms of a chemosensory-guided, receptor-related nutritional behavior are largely unknown.

What challenge is tackled?

Clarifying the mechanisms for an odorant receptor-related, genetically based consumer choice of foods.

What is done?

We perform large-scale high-throughput screening to assign cognate key food odorants to receptors, and human studies with individuals carrying a specific anosmia, to validate odorant-receptor coding.

What has come out of your work?

Identification of both narrowly and broadly tuned odorant receptors for key food odorants, and their dependence on e.g. food-dependent trace elements.

What´s the value?

Knowledge gained on odorant-receptor coding and receptor-related individual chemosensory phenotypes will guide the development of personalized nutrition and receptor-based, cell-free sensors for food quality control.
